Sweet Sour Safran Chicken With Dry Apple, Peach And Raisin




Here is one of my favorite sweet and sour recipes inspired by Moroccan cuisine. This is also an update for a recipe I shared last year with similar method here: Sweet Sour Recipe: Grilled SaffranChicken Or Meat With Dry Plum And Apricot


Ingredients 


4 Pieces chicken    ( preferred are legs )   
3 Red onion 
 Handful each : Dry Apple , Peach , Raisins ( or optional quantity ) 
2Tbsp Ghee 
2Tsp vegetable  oil
1/4 Tsp salt 
1/2Tsp Ginger
1Tsp saffron powder
60g almond
1 cup water

Recipe Method

  • Slice the onion to long thin pieces. 
  • In cooking pan add oil, ghee, chicken pieces and the onion. Add all spices and cook for 5 minutes on very low heat.
  • Add all the dried fruite than add the water, close the cooking pan and let it cook on medium heat for about 15 or 20 minutes ( Until the chicken is cooked ). 
  • If the water drys fast add 2 Tsp each time to keep the sauce and make it thick.
  • In a frying pan, fry the almond in vegetable or frying oil, until golden. 
  • By the time the chicken gets ready the sauce should be thicken. If not wait bit more until it does. 
  • Serve the chicken as shown above in the photos topped with the fired almond.

* You can eat it with pita bread or saffron basmati rice.
