Weekend Treats: Fig Goat Cheese Crostini

Last weekend I made this lovely weekend treat. This type of crostini can be used both as appetizer or a snack. As we eat dinner early quite often we usually have a late snack during the evenings, especially in the weekends.

There are lots of ways to make this type of toast crostini. I added my own touch to this one buy making a saffron and minced onion sauce / paste which I noticed to go very well with sweet additions such as dry fruits and honey from the moroccan cuisine basics.

I hope you guys enjoy this inspiration and make your family and loved ones some treats next weekend!

INGREDIENTS

½ French baguette, sliced or toast bread
2 tablespoons olive oil
4 ounces soft goat cheese (chevre)
1 pint fresh figs, sliced
2 tablespoons honey
Wallnuts

Saffron paste sauce * Optioal

1 onion pealed and minced
2 tbs vegtable oil
1 tsp ginger powder
A pinsh of saffron, black pepper and salt

Fry the mix on a low heat until the onion gets soften for about 10 minutes. You can add 1 tbs of water if the paste started to get dry.

INSTRUCTIONS

Brush the bread slices with olive oil, season with salt and pepper. Or use the saffron sauce paste explained above.
Place in the oven under the broiler for about 5 minutes, or until just starting to toast. Remove from oven.
Spread goat cheese on toasts. Top each with a few slices of figs, then drizzle with honey. Season lightly with fresh cracked pepper (one or two turns of the grinder, not too much).
Place back under the broiler for 2 or 3 minutes, until honey is just starting to bubble and edges of bread are browning. Remove from oven and serve right away.
Top with walnuts
