Spicy Farfalle Recipe

One of my quick and easy original recipes which we love, especially if we are having a lazy day dinner TV. Or a quick lunch before my hubby leaves for work. If you do not like spicy food you can control the amount of spice by how many chili flakes you use. Two chili flakes for two servings is mild, three would be very spicy.  







INGREDIENTS (6 servings)

1 or 2 Chili flakes ( depends on how spicy you want the pasta to be) 
2 tablespoons olive oil
Spicy sausages or salami
3 garlic cloves, minced
1 can crushed tomatoes with added puree
453 g farfalle (bow-tie pasta)
5 tablespoons black olive
1/2 teaspoon dried crushed red pepper
1/2 teaspoon black pepper
Pinch of kosher salt

Optional: chopped fresh basil , parmesan cheese for garnish

PREPARATION

Start as shown in the photo where I minced garlic and the chili flakes in olive oil.

In a heavy large skillet medium-high heat, add the garlic chili mix and fry until golden. 

Add the salami, tomato sauce and olive; sauté until tender about 3 minutes longer. Reduce heat to low and simmer until the mixture thickens, about 3 minutes. 

Season to taste with salt and pepper.

Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain, reserving 1 cup cooking liquid. Return pasta to same pot.

 Add sauce mixture and toss over medium-low heat until sauce coats pasta, adding reserved cooking liquid by 1/4 cupfuls if mixture is dry. Transfer pasta to serving dish. Sprinkle with basil. Serve, passing cheese separately.
