Pineapple and Rhum Sangria Recipe

Hello! I made this lovely sangria for one of our friends visit. It matches the Caribbean tropical lifestyle and the local rum. Enjoy the inspiration and photos I took after serving ;-)

Serves 4-6 people
1 cup = about 200ml

Ingredients:

* 1 pineapple, peeled and cut into pieces
* 2 cups of water or ice cubes
* 1 cup of white wine
* Sugar (or coconut sugar)to taste
* 1 cup of white rhum
* Juice of 1 lemon
* 1 cup sparkling water or club soda (works great with ginger beer or sparkling lemonade too)

Optional : Lime or lemon chops for both decoration and extra taste.

Instructions:

1) In a blender, mix half of the pineapple pieces with 2 cups of water. Pass through a fine strainer and place in a punch bowl. Sweeten to taste with coconut sugar.

2) In the bowl add the white wine, rum, remaining pieces of pineapple and club soda. Mix and serve fresh with crushed ice, garnished with pineapple pieces, and if desired with glasses lined with a little coconut sugar, cinnamon,  or a mix of regular sugar and cinnamon.

3) Add lime or lemon chops.
